Smoked Sweet Potato Stew Recipe

After smoking meat and fish all week, you need a balance day to get your vegetable levels up again. And yes we know, vegetables sound a lot more boring than a good smoked brisket, or a delicately smoked salmon. But it would still surprise you how smoking vegetables gives a real nice twist to taste of the veggies. Think of searing your veggies on the grill. It gives you just that outdoor cooking twist. Now try this recipe for smoked sweet potato stew! Hearty, healthy and super delicious!

Ingredients

3 Sweet potatoes, peeled & cubed

1 Tbsp oil

1 Large onion, diced

4 Garlic cloves, minced

1 Tsp turmeric

½ Tsp curry powder

½ Tsp cumin

¼ Tsp chili flakes

1 Tsp salt

½ Tsp black pepper

¾ Tsp cinnamon

¼ Tsp nutmeg

1 Cup vegetable stock

1 Can chickpeas (14 oz)

1 Can diced tomatoes (14 oz)

Cilantro

Preparation

Smoke sweet potato cubes for 1 hour with alder bisquettes at 250°F

Sauté onions and garlic in oil for 2-3 minutes on low heat

Add seasoning, stock and smoked sweet potatoes and bring to a boil

Reduce heat and simmer until sweet potatoes are soft

Add chickpeas and canned tomatoes

Cook for another 5 minutes

Serve with cilantro
