This Smoked Strawberry Shortcake is a definite MUST TRY!
1 pint strawberries, hulled
6-8 mini (individual sized) angel food cakes
4 cups whipped cream
1/2 cup maple syrup
fresh mint leaves for garnish
1. Set the smoker to 275 F using fruit wood bisquettes (like cherry or apple).
2. Lay a sheet of aluminum foil on a smoker rack. Evenly spread the strawberries across the aluminum foil. Place the rack in the smoker and smoke the strawberries for about 1 1/2 – 2 hours.
3. Remove the strawberries from the smoker and chill in the fridge.
4. Slice the strawberries and assemble the shortcakes, by placing a mini angel food cake on a small serving plate. Top with sliced smoked strawberries, a dollop of whipping cream and drizzle with maple syrup. Garnish with a fresh mint leaf.
