Crispy Smoked Chicken Wings: The Two-Temp Method
Ingredients
5 lbs Chicken Wings: Separated into drums and flats.
2.5 tbsp Baking Powder: Must be aluminum-free for the best crispy texture.
1 tsp Kosher Salt
Your Favorite BBQ Dry Rub (Alternatively, mix equal parts garlic powder, onion powder, paprika, and brown sugar).
Sauce of Choice: Buffalo sauce, sweet barbecue sauce, or serve them naked.
The Wood: Cherry, Apple, or Pecan Bradley Bisquettes.
Preparation
1. Dry the Wings: Do not skip this step! Pat your chicken wings completely dry with paper towels. Removing surface moisture is mandatory for the baking powder to do its job and for the skin to crisp up.
2. Season and Dust: In a large bag or mixing bowl, combine the baking powder, kosher salt, and your BBQ dry rub. Toss the dried wings in the mixture until every drum and flat is evenly coated.
3. Smoke Low and Slow: Preheat your Bradley Electric Smoker/Grill to 250°F for indirect cooking. Place the wings on the racks and smoke for 30 to 60 minutes. This low-and-slow phase is where the meat absorbs that rich, clean wood aroma.
4. Crank the Heat and Crisp: Now it's time for the magic. Increase the smoker/grill heat to 425°F (or move the wings over direct high heat). Cook for an additional 15 to 20 minutes. Watch as the skin turns golden, blistered, and crispy.Ensure the internal temperature of the chicken reaches at least 175°F (wings are actually more tender and fall-off-the-bone when cooked slightly past the standard 165°F!).
5. Sauce and Serve: Pull the wings piping hot. Toss them immediately in warm Buffalo or BBQ sauce, or serve them dry with a side of ranch or blue cheese.
