Simple, easy and quick. A marinade using lime, Sriracha and soy sauce helps to bring out the natural flavours of the fish. The smoking process is not time-consuming. Use Pacific Blend bisquettes and smoke it for just 45 minutes.
1 Albacore tuna loin
¼ Cup brown sugar
1 tbsp crushed chili flakes
2 tbsp kosher salt
Zest and juice of 1 lime
2 tbsp Sriracha sauce
1 tbsp soy sauce
2 Cups water
- Combine together ingredients for marinade.
- Cut tuna loin into segments and submerge in marinade.
- Marinate for 20 minutes.
- Remove from marinade and place in aluminum trays.
- Smoke with Pacific Blend Bisquettes for 30-45 minutes at 140°F.
