Smoked Reverse Seared Tomahawk Steak

Learn how to make some smoked reverse seared tomahawk steak, one of the most delicious pieces of beef.

Tip: Marinade steak for 48 hours using a 1 gallon zip lock bag. Please simmer the marinade for minimum of 10 minutes to ensure the alcohol content cooks out.

Ingredients for the Marinate

  • 1 cup ketchup
  • 1oz white rum
  • 1/4 cup molasses 
  • 1 tbsp. lemon juice
  • 1 tbsp. Worcestershire sauce 
  • 1 tbsp. soy sauce
  • 1/2 tsp ground pepper 
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper 
  • 1/4 cup balsamic vinegar
  • 1 tbsp. chopped onion


  1. Mix all marinate ingredients together in a saucepan and simmer on medium heat for 10 minutes. Let sit for 5 to 10 minutes before using.
  2. Preheat your Bradley Smoker to 226F (107.8C), season all sides of steak with salt and pepper. Place in smoker with thermometer probe to monitor internal temp.
  3. After 60 min in the smoker flip the steak. Once the steak reaches an internal temp of 135F (57.2C) pull off the smoker.
  4. Fire up the grill and sear the steak on both sides. Sear the steak on both sides for 15 to 20 seconds. place 2 tbsp. of butter on top of the steak. Rest for 10 minutes and serve!
