Ingredients

  • 5 lb Outside Round cut into 1/4 in slices
  • Hi Mountain Jerky Cure (Pepper Blend)

Preparation

  1. Mix as per instruction that come with the jerky cure
  2. Sprinkle cure evenly on slices
  3. Let sit in fridge 1-2 days

Smoking

  1. Smoke with 1 Hickory then 2 cherry then 1 hickory
  2. Cook at 250 F for 4-5 hours or until desired doneness
  3. Be sure to rotate racks every hour
