Beef Ribs vs Pork Ribs

I got the question from Allen Johnson about Beef Ribs vs Pork Ribs.  Personally, I am a big fan of Pork Ribs and prefer them to Beef Ribs. Beef ribs are typically chewier and fattier than pork spare ribs. Both Beef Ribs and Pork Ribs can be barbequed same way but use different spices.  The actual ribs themselves are also much bigger and meatier, as you can imagine a cow is much bigger than a pick. I also don’t know if I’ve ever seen a Beef Rib intact with other ribs, typically you see them cut up.

I would like to know what everyone prefers to eat… Pork Ribs vs Beef Ribs?  Do you prefer to smoke them, grill them, or dutch oven them?

  1. I am having the wife go out shopping today to get some Pork Loin and St. Loius style ribs. I will try out a couple of recipes and will be posting images of the process on the forum.

  2. I prefer the beef, but it does shrink alot. For family get togethers I do use the pork, it goes further and cost less.

  3. Pork all the way baby. I use the 3-2-1 method…… 3-hours @ 220, 2-hours wrapped in foil, 1-hour out of foil. First phase spray ribs with 50/50 Jack Daniels and apple juice every half-hour. Last phase slather with sauce (if desired) 30-minutes before removing from smoker.

  5. The only way I’ll cook beef ribs is in a crock pot slow cooker. St. Louis style pork ribs are my favorite on the grill or smoker.
